Corncob Jelly? What? Oh yea, tasty stuff!

I found this recipe last year and never got around to trying it, so this year after freezing some corn I decided to make use of the cob’s and give this recipe a try. I will definitely be making this jelly again. It tastes a lot like honey! We love it!

So here is the share for all of you!

12 large corn cobs

4 cups of water

1 package of powdered fruit pectin

4 cups of sugar

Yellow food coloring ( optional )

Note: I never add food coloring to my jelly. Natural is better!

So first off you need to cut the corn off the cobs and reserve for another recipe or freeze it like I did! In a stockpot, place your cobs and water, and bring to a boil and boil for 10 minutes.

Discard the cobs and strain the liquid through a cheesecloth. Liquid should measure 3 cups after boiling, add extra water if necessary.

Return to the pot and stir in pectin. Bring to a full rolling boil. Add sugar and bring it back to a boil again. Skim foam and if you are adding food coloring add it now.

Pour into hot jars leaving a 1/4 inch head space. Adjust two piece caps. Process 10 minutes in a boiling water canner. Let cool! Makes about 4 pints. I liked it so much I have made 3 batches.

Our Fettuccine Alfredo!

Ok so my attempt at the new recipe tonight was a screaming success! This Alfredo Sauce is so Yummy! We also made some Yeast rolls to go with our Fettuccine. Our rolls were frozen rolls by ” Rhodes“.  Rhodes is a great brand they make some awesome Cinnamon Rolls as well, that’s what we had for dessert tonight, they are the Giant Cinnamon Rolls and they were HUGE. Here are some pictures, also I shared the recipe for the sauce so check it out!!!

Thinking of trying a new recipe tonight!!

I am thinking about trying out a new recipe tonight for Alfredo Sauce…I have never made this before so it should be fun! I have to work today and don’t get out till 6:00pm but I will let you all know how it turns out and if we like it I will share this simple recipe with you all. I am so excited I love Fettuccine Alfredo, I just wish I had time to grill up some Chicken to throw in it too. Oh well maybe next time!
